In Search of An Energy Boosting Breakfast That Leaves You Alert & Productive At Work?

I’m always in search for healthy breakfast foods. Cereal is too carb heavy and boxed varieties often contain too much sugar and or sodium. Muffins and bagels are even worse and have very little nutritional value. Eggs and with healthy sauteed veggies like spinach, tomatoes, and onions etc are a good option can take too much preparation when I’m pressed for time. Juicing is certainly a healthy option but I’ve always found buying all those vegetables and then cleaning the juicer a bit of a pain.

Blending is my favorite option because it is super quick and easy. Just wash and throw veggies and fruit in a powerful blender, add some water and protein powder if you want and you’ve got one of the healthiest breakfasts ever. Because you’re eating the whole vegetable and fruit you’re getting all the filling fiber which will keep you feeling fuller longer. The variety of drinks you can make is huge. Sometimes I go with a veggie and fruit blend and when I used tomatoes as the base I make it all vegetable. Don’t forget to add a squeeze of lemon and little chunk of ginger. Vitamix is the de facto king when it comes to blending but I get by just fine with my $99 KitchenAid. It’s plenty strong and will pulverize kale, apples and even beets no problem.

Here’s my favorite fuel breakfast recipe right now?

  • 2 small or 1 large leaf of dino kale, de-stemmed about 1/2 way up (less stringy & bitter than curly kale)
  • 1 apple, quartered and cored
  • 1/2 cucumber
  • 5 baby carrots
  • 1 beet, peeled and quartered
  • Juice from 1/2 lemon
  • Small cube of ginger
  • Splash of water
